A week full of plant-based theme nights meals

If you’ve been struggling to come up with ideas for what to put on your plant-based meal plan, it’s time to theme your week!

Theme nights are one of my favorite ways to make weekly meal planning easier. Instead of thinking of the 1001 different recipes you could make, choose a theme first (like pasta, Mexican, soup, pizza, or stir fries) and then narrow in on a recipe.

I’ve pulled together a 5-day vegan theme night meal plan for you to get started. Follow it exactly, or use it as a guide to plan your meals next week.

Breakfasts for the week 🥣

I alternate 1-2 breakfasts for weekdays, and 1 more indulgent for the weekend

Main dish recipes 🍲

Tip: Make enough for the next day’s lunch leftovers (less cooking!)
