Each Saturday I create a seasonal plant-based meal plan for the week ahead so you can get a glimpse of exactly what a plant-based dietitian really eats each and every day. Use my plan below, or make it your own!

Breakfasts for the week 🥣

I alternate 1-2 breakfasts for weekdays, and 1 more indulgent for the weekend

Main dish recipes 🍲

Tip: Make enough for the next day’s lunch leftovers (less cooking!)

Backup salad of the week 🥗

Sweets and snacks 🍪

I always plan one snack and one sweet to batch for the week

May’s full Moon, called the Flower Moon, appears on Thursday, May 23, reaching peak illumination at 9:53 A.M. (EDT). It will be below the horizon at this time, so for the best view of this full Moon, step outside on the night of the 23rd or the 24th and look for that big, bright, shining lunar disk! (source)
