It’s the beginning of May and the late spring harvest is just now starting to hit the markets! That means one thing…the abundant summer bounty is right around the corner (bring on the tomatoes!).

I’ve pulled together a meal plan for next week so you can celebrate the season’s freshest foods. I hope you enjoy, please let me know if you give it a try!

I alternate 1-2 breakfasts for weekdays, and 1 more indulgent for the weekend
