Not boring salads that deserve a spot at your dinner table

We don’t tolerate salad mediocrity around here.

Many times when I’ve told people I eat a predominantly plant-based diet, they say to me, “I could never eat that many salads, I’d get bored.”

There are a couple of things wrong with this statement; first, the assumption that if you eat mostly (or even all) plants that you must eat salads. You absolutely can hate salads and still eat plant-based because of the dizzying array of meals you can make with plant foods.

And second…who is out there making boring salads?!? I know I’m not, and if you are thinking to yourself, “Yeah, maybe my salads are a little boring", then today’s recipes are perfect for you.
