Easy ways to use up those tomatoes on your countertop

ToMAYto, toMAHto, let’s call the whole thing off

It’s the best time of year for tomatoes. Every trip to the garden plot means I come home with another pound of the bright red little orbs.

Tomatoes in soups, tomatoes in salads, and tomatoes in sauces – it’s the time of year when you scrounging for more tomato recipes to use them up before they go bad.

But one of my personal favorite ways to enjoy tomatoes is roasting them. Whether alone to use as toppings for bruschetta or pizza, or with other summer harvest vegetables for easy side dishes.

I hope you add a few tomatoes to your meals for a burst of flavor…and vitamin C. 👇

DID YOU KNOW? 🧐

When tomatoes were first introduced to Europe in the 16th Century, they were small, golden and cherry sized. This appearance gave them the name ‘golden apples’. Many European countries took this as inspiration and named them with gold names, such as the German ‘goldapfel’. The French were also convinced tomatoes were aphrodisiacs and named them “love apples.”
