Take 10 minutes at night to have a stress-free morning.

Are your mornings hectic? If your house is anything like mine, getting everyone up, fed, dressed, and out the door without stress (or complete toddler meltdowns) means it’s a rare unicorn morning.

But one thing that has helped our morning routine is prepping breakfast the night before.

We’ve learned – through much trial and error – that taking 10 minutes to prep our morning meal at night before bed can save double the amount of time in the morning. And who couldn’t use an extra 20 minutes back each morning?

That’s why I’m sharing three of my favorite easy, prep-ahead seasonal overnight oats recipes that are full of fiber, plant-based protein, and healthy fats – the nutrient trio that will keep you energized throughout your morning.

Oats are rich in carbs and fiber, but also higher in protein and fat than most other grains. They contain many vitamins and minerals, as well many antioxidants, including avenanthramides. These compounds may help reduce blood pressure and have anti-inflammatory effects. Oats are also high in the soluble fiber beta-glucan, which has numerous benefits. It helps reduce blood glucose levels, promotes healthy gut bacteria, and can regulate type 2 diabetes. (source)
