Oatmeal cookies should be soft and chewy.

This is a hill I will die on.

I recently had a fight with a family member who insisted that oatmeal cookies need to be thin and crispy. In my opinion, those are fighting words.

I'll say it once: oatmeal cookies should be soft and chewy. I do not accept crunch when it comes to cookies.

Usually this is hard to achieve when making cookies without eggs and real butter, but I've cracked the code on chewy, soft plant-based cookies with today’s collection of oatmeal cookies.
