My salad meal prep secret that makes the week easy peasy

Here’s one of my meal prep secret weapons: back up salads, or salads you make once and keep on hand for easy lunches or as a backup meal when life gets in the way (because you know it inevitably will).

The key to a good backup salad is that the ingredients are sturdy and hold up well in the refrigerator days after making, and today’s new recipe surely meets this criteria. I hope you give it a try!
