Plant-based protein-packed recipes to fuel your week

Here’s a secret from a dietitian (me) who has been eating a plant-based diet for 5 years: you really don’t need to worry about protein as much as you think you do.

I had a lovely conversation with a newsletter subscriber (hi!) this past weekend about eating more vegan food, but she was worried she wasn’t getting enough protein. And I told her this: “As long as you are getting a variety of plant foods like beans and other legumes, tofu, tempeh, nuts, seeds, whole grains, and maybe occasionally a scoop of plant-based protein in your smoothie or oatmeal, you’re likely getting more than enough protein.”

It’s a BIG misconception that it’s hard to meet your protein needs on a plant-based diet. I’ll share my 4-day plant-based meal plan below if you haven’t downloaded it and even if you don’t follow it, take a look at the meals as they are all planned to meet protein requirements of a 150-pound adult.
