Most nights are easy night, sometimes you need something EPIC

When I plan my weekly meals, I think about dinners two ways: simple (easy) nights and challenge (epic) nights.

Most nights are easy—quick meals ready in 40 minutes or less. About 1-2 times a week I embrace a challenge meal with a new-to-me recipe, ingredient, or technique (this is how you keep learning!).

This week I challenge you to think this way as well: choose easy meals most nights of the week, but for at least one meal…make it EPIC. ✨
