Let’s get mellow with the season’s yellow foods!

Yellow is the color of sunshine, happiness, curiosity, and hope. These are the feelings that the coming spring conjures up as the sun starts to shine longer each day and bring warmth and excitement for the months ahead.

I had so much pulling together this yellow-themed meal plan featuring foods that get their bright colors from antioxidants like carotenoids and anthocyanins. I hope you enjoy!

Yellow and orange foods, such as bananas and mangos, are high in antioxidants called carotenoids, such as alpha- and beta-carotenes and also vitamin A, vitamin C, magnesium, lutein, and zeaxanthin (among others).
