Easy meals vs. epic meals
Is it an easy meal night, or a night for something epic?
When I plan my weekly meals, I categorize dinners into two types: simple (easy) nights and more complex (epic) nights.
Most nights are easy—quick meals ready in 40 minutes or less. About 1-2 times a week I embrace an epic meal, which is a recipe I know how to cook but involves a little more effort (maybe 45-60 minutes, and more complicated steps).
This week I challenge you to think this way as well: choose easy meals most nights of the week, but for at least one meal…make it EPIC. ✨
