Happy Earth Day! 🌍

I think there are three main reasons why people decide to eat plant-based: for their health, for the animals, and for the planet.

I fall mostly into the third bucket – my main reason for going vegan 4+ years ago was for the environment, but of course the benefits to my health and reduction of harm to animals helps support my decision. On top of being a dietitian and learning the health benefits of eating all (or mostly) plants, I have worked in the food and agriculture industry for years and see firsthand the environmental impact of industrial animal agriculture. I realized by eating plants, I was opting out of that harmful system.

Whatever your reason for being here – whether you’re interested in going plant-based or you simply want ideas for plant-rich meals – I want to thank you for allowing me to pop into your inbox each morning and share my recipes with you. Now go and eat a plant for me on Earth Day! 🌎

Earth Day, which takes place on April 22, dates back to 1970, when U.S.-based organizers were hoping to bring awareness to the environmental degradation they were witnessing across the country. Since then, recognition of the holiday has expanded to more than 190 countries who have added Earth Day to their calendar. (source)
