Soup night is one of my favorite weeknight meal theme nights, but ain’t nobody got time to spend cutting vegetables and prepping ingredients for longer than 15 minutes on busy nights.

That’s why today I’m sharing three simple soups that require minimal prep time and take you from start to slurp in about 30 minutes (give or take).

Add one of these soups to your weekly meal plan next week and eat the leftovers for days after (because we’re all about cooking once and eating multiple times around these parts).
